Praised for its convenience and versatility, pasta is a go-to dish throughout the year. It cooks quickly on a busy weeknight, and the number of gluten-free options out there makes it easy for the entire family to enjoy. But we really love it in cooler weather, and when fresh out of the oven – in a creamy, comforting, dairy-free pasta bake.
Each of these deliciously dairy-free recipes is sure to please – especially when topped off with a generous amount of melty Daiya Shreds.

Classic stuffed shells are given a plant-based makeover with this hearty and satisfying recipe, which features a prepared sauce (make it spicy!) for added convenience. And once you’ve mastered the cauliflower-tofu “ricotta,” you’ll definitely want to make it again to be used in other dishes.

Another delightful dish that highlights the flavors of our favorite veggies is this delicious (and easily adaptable) pasta bake. It calls for frozen cauliflower florets and spinach, but we say use fresh if you have it available. The artichoke hearts, lemon juice, Dijon mustard and spices create a complex and craveable flavor.

Prefer your “cheesy” baked pasta on the spicy side? This dish is for you. It features a creamy blend of raw cashews and almond milk, as well as a generous dose of nutritional yeast for maximum flavor. Organic tomato, onion, garlic and cilantro round out the sauce while fresh jalapeño peppers pack some heat.

Even those who say they don’t like Brussels sprouts will love this. The fresh veggies (both sprouts and spinach) are mixed with high-quality pasta (use gluten-free, if you’d like) and the entire thing is blanketed in a rich and savory (and allergy-friendly!) sunflower seed cream before being popped into the oven and baking to golden, comfort-food perfection.

On those chilly evenings when you just want something simple and tasty, you just may find yourself reaching for this recipe.
