We’re craving a salad that perfectly balances freshness and flavor, that’s hearty enough to serve as a stand-alone entrée, and that packs a tasty punch of the dairy-free deliciousness you can only get from Daiya.

The name says it all: This salad is perfect. It’s packed with green veggies (think mixed greens, green onions and green peas) and delicious additions like vegan bacon bits and Daiya Cheddar Style Shreds. Seasoned tofu crumbles add heft, while the creamy dressing is one you’ll want to make again and again.

Here’s a salad that’s all about simple pleasures. It’s made with just chopped dinosaur kale (which holds up to dressing better than lettuce) and Daiya Mozzarella Style Shreds, gently dressed with a combination of lemon juice, olive oil, coconut nectar and chopped garlic. To turn it from a side into a main, try topping it with your favorite protein.

Some might say pasta salad doesn’t really count as salad – but regardless of which side of the argument you fall on, you should try this recipe. Daiya Mozzarella Style Shreds add cheezy oomph to the dressing, while the green peas provide some fresh sweetness. Consider adding other vegetables as well, like chopped celery, spinach or bell peppers.

This might look like an ordinary salad but once you dig a little deeper, you’ll find it’s anything but. Beneath the crunchy layer of fresh baby spinach, butter lettuce, sliced cucumbers and carrot ribbons, you’ll find a bed of spicy nachos topped with bell peppers, red onion, seasoned lentils and chickpeas. Add some sliced avocado, a squirt of lime and a sprinkle of Daiya Cheddar Style Shreds, and you’re good to go.

Don’t let the long list of ingredients deter you; this salad is worth the work! It starts as a simple combination of fresh fruits and veggies (including apples, chard, bell pepper, radishes and your favorite citrus) dressed in a light vinaigrette, but then is topped with barbecued shiitake mushrooms and tofu triangles, and surrounded by cheezy triangles made with Daiya. Sure, it’s colorful – but it’s incredibly flavorful as well.
