Breakfast Squash Bowl

Eat your veggies for breakfast with this delicious plant-based yogurt bowl.

Ingredients

  • 1 tub Daiya Plain Yogurt Alternative
  • 1 medium sized acorn squash, halved
  • 1 tbsp brown sugar
  • 1 tbsp olive oil
  • 1/4 cup pepitas
  • 1/4 cup dried cranberries
  • dash Maple Syrup, to your taste

Instructions

Preheat your oven to 400F (204C) and line a large rimmed baking sheet with parchment paper

Rub olive oil and brown sugar into the squash halves. Place squash cut side down, on the baking sheet and bake for 30 - 40 minutes, or until the halves are tender and golden brown around the edges.

Allow to cool and then divid the Plain Greek Yogurt Alternative, pepitas and cranberries between the two halves.
