Sweet, spicy and oh so delicious! These dairy-free cauliflower wraps are perfect for sharing on a warm summer night
Start by making the cauliflower crumble. Roughly chop the head of cauliflower into small bite size pieces.
Heat oil in a pan on medium heat and add the cauliflower. Top with chipotle powder, paprika, cumin and maple syrup then mix well.
Simmer until the cauliflower starts to becomes soft. Add lime juice and green onions and continue to cook until the excess moisture is cooked off.
While the cauliflower is cooking shred the cabbage and grate the carrots.
Assemble the lettuce wraps. Using the butter lettuce as the base, fill with crumble, cabbage and carrot. Top it all off with Daiya Blue Cheeze Style Dressing, pumpkin seeds and cilantro.
