Dairy-free Cheeze and Vegetable Soup

Ingredients

  • 1 1/2 cups potatoes, peeled and cubed
  • 1/2 cup carrots, cubed
  • 3 cups water
  • 2 vegetable bouillon cubes
  • salt and pepper to taste
  • 1 1/2 cups broccoli florets
  • 3/4 cup dairy-free milk of choice
  • 1 package Daiya Cheddar Style Shreds

Instructions

In a small saucepan, combine the first five ingredients. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.

Add remaining ingredients into the saucepan. Bring to a boil; cook until Daiya Cheedar Style Shreds are melted and the broccoli is cooked.
