Dairy-free Cucumber Salad

This cool cucumber salad in a cream dairy-free Greek Yogurt and dill dressing makes a tasty and refreshing side dish. You can also finely dice the cucumbers to make it into a plant-based tzatziki

Ingredients

  • 1 cup Daiya Plain Yogurt Alternative
  • 3-4 cucumbers, thinly sliced
  • 1 red onion, thinly sliced
  • 3 clove garlic, minced
  • juice from 1/2 lemon
  • 1/4 cup fresh dill
  • 1/4 cup fresh parsley
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions

Combine the cucumber and onion in a large bowl

Combine the remaining ingredients in a small bowl then add to the cucumbers and toss to coat. Add more salt and pepper as desired.

Refridgerate for 1 hour prior to serving.
