Slice baguette, brush with olive oil. Place in oven at 375F for 5mins or until lightly browned.
Mix balsamic vinegar and maple syrup, drizzle in olive oil while mixing. Adjust to taste then set aside.
Slice peaches, brush with olive oil and place on a grill/grill pan for 2-3 mins on each side or until nice grill marks have been achieved.
Cut mozzarella into small squares and place 3 squares on each baguette. Place in the oven for 3-5mins.
Remove from oven, top with grilled peaches and sliced cherry tomatoes.
Season with salt and pepper, top with basil and crushed almonds. Finish with a drizzle of maple balsamic dressing.
