Healthy Sweet Potato Kebabs

Ingredients

  • 1 cup Daiya Smoked Gouda Style Block, crumbled
  • 3 Sweet Potatoes
  • 4 onions
  • 1-2 tablespoons olive oil
  • 1 lemon
  • salt, to taste
  • pepper, to taste
  • ¼ cup parsley, chopped

Instructions

Peel sweet potatoes and cut into 1-inch cubes.

Cut onion into 1-inch sections, big enough to place on a skewer.

Drizzle olive oil over the sweet potatoes and onion chunks assemble onto skewers, alternating between sweet potato and onion.

Grill the skewers until sweet potatoes are fork tender.

Remove from grill, season with salt, pepper and a squeeze of lemon.

Crumble Smoked Gouda Style Blocks over the skewers and garnish with chopped parsley
