Mac & Cheeze with Roasted Butternut Squash & Kale

Take your veggie game up a notch with this twist on our Alfredo Style Mac & Cheeze. Incorporating squash and kale into your Mac & Cheeze is the perfect way to use in-season veggies, while still enjoying the creamy deliciousness of our creamy, cheezy plant-based pastas!

Ingredients

  • 1 Box Daiya Alfredo Style Mac & Cheeze
  • 1 Tbsp olive oil
  • 2 Tsp kosher salt
  • 1 Butternut Squash, (Peeled and cubed)
  • 4 Cups Baby Kale

Instructions

Preheat oven to 400 F

Peel, de-seed and cut squash into 1/2 inch cubes

Toss butternut cubes in oil and salt and spread evenly on baking sheet

Roast for 30 minutes or until tender

Prepare Daiya Deluxe Alfredo Style Mac & Cheeze, per box instructions

Add kale to hot pasta to warm and wilt the kale

Add roasted butternut squash

Enjoy!
