Pasta Primavera


  • 1 box Chickpea pasta
  • 2 cups fresh broccoli
  • 2 cups fresh asparagus, cut into 2 inch pieces
  • 1 large sweet pepper, diced
  • 1 medium red onion
  • 4 cloves galic, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup fresh spinach, roughly chopped
  • 1 cup frozen peas
  • 1 cup Cherry Tomatoes
  • 1 lemon
  • 2 tbsp minced fresh basil
  • salt and pepper to taste
  • 1 block Daiya Jack Style Block


Cook pasta according to package instructions and set aside.

In a large skillet saute broccoli, asparagus, pepper, onion and garlic in olive oil until veggies are just tender.

Stir in spinach, peas and cherry tomatoes and cook for another 5 minutes

Add pasta, the juice of one lemon, and basil to vegetable mixture.

Season with salt and pepper.

Top with grated Daiya Jack style block.
