Roasted Heirloom Potatoes with Daiya Cutting Board Shreds

Ingredients

  • 2 lbs potatoes, (Washed and quartered)
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 Cup Daiya Mozzarella Cutting Board Shreds
  • 1/4 Cup Daiya Cheddar Cutting Board Shreds

Instructions

1. Preheat oven to 450 degrees

2. Add potatoes, olive oil, salt and pepper to a large mixing bowl

3. Coat potatoes and place on an oiled baking sheet

4. Bake 20 minutes, or until potatoes are browned and tender

5. Top with Daiya Mozzarella Style Cutting Board Shreds and Daiya Cheddar Style Cutting Board Shreds

6. Broil until shreds are melted

7. Yum!
