Whip up this quick and easy recipe from for a delicious breakfast, snack, dessert (or all three)!
Heat a large skillet over medium heat. Add oats and toast for 3-4 minutes, until lightly golden. Add coconut oil and toast for an additional 3 minutes.
Add maple syrup, cinnamon, and coconut shreds. Turn heat down and stir over low heat for 5 minutes. Remove from heat and let cool.
Add half of the yogurt into each parfait jar. Then sprinkle with granola and berries. Add remaining yogurt and top with granola, berries, and mint, if using. Serve immediately and enjoy!
