Sweet and Savory Grilling Cheeze Burgers

Ingredients

  • 1 package Daiya Grilling Cheeze, sliced into 6, ½ inch rectangles
  • 4 slices pineapple
  • 4 gluten-free burger buns, toasted and buttered with vegan butter
  • 4 green leaf lettuce leaves
  • 4-8 quinoa onion rings
  • vegetable spray
  • BBQ Sauce
  • 1 can mini roma tomatoes, 398 mL
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 7 medjool dates, pitted and chopped
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1-2 tbsp Ground Ancho Chili, (or desired amount for spice)
  • 2 tbsp Coconut Vinegar, (can sub with apple cider vinegar)
  • 2 tbsp Pomegranate Molasses
  • Puffed Quinoa Onion Rings
  • 2 Red Onions, small to medium sized, sliced into ½ inch rounds
  • 1/2 cups + plus 2 tbsp. Gluten-Free Flour
  • 1 cup Puffed Quinoa
  • 1/2 cup Gluten-Free Breadcrumbs
  • 2 tbsp Cornstarch
  • 1 tsp baking powder
  • 1/2 tsp chili powder
  • 1 1/2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup Gluten-Free Oat Milk
  • Sunflower or Canola oil for frying

Instructions

Preheat BBQ to 450°F. Grill Daiya grilling cheeze according to product instructions.

Spray pineapple slices with vegetable spray and grill for 4 minutes either side until lightly charred and caramelized.

Build burger ingredients in order from the bottom: lettuce, 1 pineapple slice, 1 tbsp. bbq sauce, BBQ’d grilling cheeze, quinoa onion rings and top with bun top.

In a medium size pot over medium heat, bring sauce ingredients to a gentle boil. Reduce heat and simmer covered for 15 minutes. Remove from heat and cool completely. Puree sauce in a food processor or use an immersion blender. *If desired, add a small amount of water to thin sauce.

Heat oil in a deep fryer to 374°F. Set a cooling rack over a baking tray and set aside.

In a medium size bowl, toss onions rings with 2 tbsp. of rice flour and set aside.

In a medium size bowl, stir together puffed quinoa and breadcrumbs.

In another medium size bowl, whisk together remaining rice flour, corn starch, baking powder, garlic powder, smoked paprika, salt and pepper and oat milk.

Working with one onion ring at a time, coat in batter and gently toss in quinoa mixture. Transfer the coated onion ring to the rack. Continue with remaining onion rings. Let onion rings sit for 10 minutes before frying.

Fry onion rings in batches until golden brown, 2-3 minutes. Transfer cooked onion rings to the same cooling rack. Serve with grilling cheeze burger.
