Tofu Burrito Bowl

Ingredients

  • 1 Package (14oz) Extra Firm Tofu
  • 2 Tbsp olive oil
  • 1 Packet taco seasoning
  • 2 Cups Brown Rice or Quinoa
  • Daiya Cheddar Cutting Board Style Shreds
  • Daiya Pepperjack Cutting Board Shreds
  • Guacamole
  • black beans
  • Tomatoes
  • salsa
  • jalapenos

Instructions

Drain tofu and pat dry to remove excess liquid.

In a large skillet, heat oil to medium and add the block of tofu. Use a spoon or spatula to crumble the tofu.

Add taco seasoning and stir to coat all tofu pieces.

Cook 8-10 minutes, until tofu is heated through.

Construct bowl starting with a base of rice or quinoa.

Add the cooked tofu and your favorite burrito toppings.
