This waffles and chili combo is sure to become a new family favorite. It's quick and easy to make for a fun and healthy weekday meal. Bonus: this recipe includes fried cornmeal pickles!
In a medium size pot over medium heat, sauté onion and garlic in olive oil for 2 minutes. Add Beyond Meat and cook for 8 minutes stirring and breaking up meat. Stir in peppers, passata, chili powder, brown sugar, vegetable stock and coconut aminos. Reduce heat and simmer for 25 minutes with the lid off. Season with salt and pepper.
In a small bowl stir corn meal, paprika, salt and garlic powder together and dip wet pickles into mixture coating both sides. Set pickles aside on a plate for 5 minutes to allow coating to set. Heat vegetable oil in a small pot to 375°F. Fry pickles in batches until golden brown, 3 minutes.
Toast waffles and spoon desired amount of sloppy joe mixture onto one waffle. Sprinkle generously with cheeze and top with fried pickles. Serve with an extra waffle on top or serve as an open face sandwich.
