Vegan Veggie Kabobs

Ingredients

  • 1 Bag Daiya Mozzarella Style Shreds
  • 2 Cups Organic Cremini Mushrooms
  • 1 Organic Yellow Bell Pepper, (Cut in chunks)
  • 1 Organic Red Bell Pepper, (Cut in chunks)
  • 1 Organic Green Bell Pepper, (Cut in chunks)
  • 1 Head Organic Cauliflower, (Cut into 3/4 inch thick slices)
  • 1/2 Cup Olive Oil
  • 1 Lemon, (Juiced)
  • 2 Cloves Garlic, (minced)
  • Salt, (to taste)
  • Pepper, (to taste)
  • Red Pepper Flakes, (to taste)

Instructions

Preheat the oven to 400 degrees F or fire up your grill

In a small bowl, whisk together olive oil, garlic, lemon juice and season with salt, pepper and red pepper flakes to taste

Thread mushroom and yellow, red and green bell peppers onto skewers

Brush the olive oil mix onto both the vegetable skewers and cauliflower slices and place on a pan or tin foil

Sprinkle Daiya Mozzarella Style Shreds generously over the skewers and cauliflower slices

Roast or grill for 10-12 minutes
