Zoodles with Dairy-free Yum Yum Sauce

Ingredients

  • 3/8 Tbsp garlic powder
  • 1 Container Daiya Plain Yogurt Alternative
  • 3 tsp Agave
  • 3/8 Tbsp paprika
  • 3 tsp Rice Wine Vinegar
  • 2 Tbsp coconut oil
  • 3 Medium zucchini, (Spiraled)
  • 1 Cup broccoli florets
  • 1 red bell pepper, (Sliced)
  • 1/2 Cup mushrooms
  • Salt & pepper (to taste)

Instructions

Combine all ingredients except for the vegetables until completely incorporated

Set in refrigerator for at least a half hour

Sauté vegetables over medium-high heat in skillet with oil or cooking spray

Toss vegetables and cook for about 5 minutes or until al dente

Remove from skillet, add sauce and enjoy!
