Dairy-free Veggie Au Jus Sandwich

Ingredients

  • 1 Package Daiya Provolone Style Slices
  • 1 yellow onion, (Diced)
  • 1 lb Mini Bella Mushrooms, (Halved)
  • 2 Tbsp vegan buttery spread of choice
  • 1/4 tsp dried thyme
  • 1/4 tsp Dried Oregano
  • 2 Cups vegetable broth, (we used mushroom broth)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp brown sugar
  • 1 French Baguette
  • salt and pepper to taste

Instructions

Sauté onion over medium heat until soft

Add mushrooms and sauté until moisture is reduced

Add broth until combined then add remaining ingredients

Bring mixture to a simmer for about 5 minutes

Toast sliced baguette then add mushroom mixture

Top with Daiya Provolone-style slices and broil until melted

Serve traditional or open-faced garnished with herbs
